Pasta and Salad: Low-Key Friday Night Dinner
Last weekend I made a double batch of the Caesar Chavez Dressing from Appetite for Reduction. I've used it all week in Mediterranean Bowls and simple salads of romaine, spinach, and baby lettuces topped with some chopped walnuts. The dressing is so delicious and versatile, and it transforms a ho-hum salad into something fantastic.Tonight I wanted something super easy for dinner, so I made another huge salad. What can go better with a big salad then pasta? My next recipe to test for the next Happy Herbivore cookbook could be used on pasta, so I tried it that way as a sauce. Mmmmm. It was really, really good. The sauce is made of all raw ingredients and took all of five minutes to make, so my entire dinner was ready in 10 minutes. I love meals like this that are so quick but so delicious.

It looks a little bizarre but I'm always surprised with vegan food... it can look one way and taste the complete opposite. (That works both ways!)
