One of the things I love about Appetite for Reduction is that it not only includes recipes but also templates and general meal ideas. The book gives a template for "The Bowl:" toss a grain, a bean, and a veggie together then add a dressing.
Tonight I tried the suggestion for a Mediterranean Bowl with brown basmati rice, freshly made chickpeas I slow cooked today, roasted cauliflower, and the Appetite for Reduction Caesar Chavez Dressing. It was really, really delicious. I'm already looking forward to lunch tomorrow so I can have it again. Two huge thumbs up.
I love the versatility of this template and can't wait to try out the other bowl suggestions.
