This past week I continued to make quick meals that use only a few ingredients including
- Quiche with Greens
- Tofu Scramble
- Chickpea, Kale, Brown Rice & Sage Gravy Bowl
- Spicy Mushroom Stir-Fry
- Tortillas filled with a black-bean dish (a test recipe for Happy Herbivore) and Queso Sauce
The budget also went to ingredients for a dinner I'm hosting for friends this weekend, where I'll be making
- Spinach Linguine with Cilantro-Basil Pesto and Artichokes
- Veggie Salad with Mediterranean Olive Oil and Lemon Juice Dressing
- Golden Vanilla Cupcakes with Chocolate Mousse Frosting
