Pad Thai Salad

Who said salads have to be boring? The Pad Thai Salad from Appetite for Reduction I made this week was a really different, spicy salad. The salad itself has romaine lettuce, bean sprouts, red onion, carrot, and peanuts. The Peanut Lime Dragon Dressing that goes with it is made from a puree of peanuts, lime juice, shallots, agave nectar, and hot sauce.

I really liked it. The book recommends beefing it up by adding some red thai tofu (another recipe from the book), so I'll add tofu next time. But just by itself, it was great. Here's the recipe.

  1. I really need to return to that book. This salad sounds so good. The only thing is that I don't like peanuts..I wonder if almonds would be okay?

  2. Thai food is so flavorful - I never once miss meat or dairy if I go for a Thai or Vietnamese meal!
