Also, Appetite for Reduction by Isa Chandra Moskowitz has recipes all easy & under 30 minutes to make and gives lots of techniques and suggestions (like general advice on how to mix veggies, grains, and beans for a whole meal). I'd suggest not trying anything with fake cheese though. If you're used to dairy, it won't taste the same, and there are so many good recipes that don't use fake cheese.
